Oatmeal Squares - Breakfast-On-The-Go

Chock-full of fruit: Dried Apricots & Fresh Organic Nectarine Oatmeal Squares
Always in a rush in the morning but still want to have a healthy breakfast? Oatmeal squares are an easy and nutritious grab-and-go solution.
Eat 'em right out of the fridge, at room temperature or warmed in the microwave. Serve as-is or with milk, or cream, or skip the dish and fanfare entirely:they can be eaten right out-of-hand. You will be happy to have these ready to go on those mornings when your schedule is tight.
Adding a variety of nuts and fruits makes every batch different to liven things up a bit. For add-in ideas check out Oatmeal Information.
Ingredients:
Makes 6-8 servings
Preparation:
You can use all water or all milk or whatever you prefer. You can also substitute some apple juice for the liquid, but I recommend not using more than 1 cup as it reduces too much and overpowers the flavor of the oats.
Preheat oven to 350°.
Cook oatmeal in liquid until done. Stir in nuts and dried fruits. Line 13"x9" or similar baking pan with fresh fruit arranged in a single layer - enough to cover the whole bottom of the dish. Add oatmeal to the baking dish on top of the fruit and carefully distribute it in an even layer over the fruit.
Bake at 350° for 45 minutes and allow to cool. Cut into serving pieces. Can be enjoyed while warm, at room temperature, or cold right out of the fridge. I layer squares in a container with waxed paper in between and store them in the fridge.

- 1/2 cup chopped almonds (or other nuts)
- 1/2 cup dried cranberries (or other unsweetened dried fruits)
- 1/4 teaspoon salt
